How To Make Chick-fil-A Cobb Salad
Just 4 simple steps is standing between you and this delicious cobb salad.
Step 1: Bread The Chicken
To start, add the flour, cornstarch, paprika, garlic powder, salt, and pepper to a bowl and whisk everything together.
Then, crack an egg into another bowl and whisk the yolk into the white until combined.
Working with one piece at a time, dredge the chicken breasts in the flour mixture and coat evenly on both sides.
Then, dip it into the egg mixture, again coating the chicken on each side.
Once coated in egg, return the chicken to the flour and dredge until well coated.
Repeat this process with the second chicken fillet.
Step 2: Cook The Chicken
Now that the chicken is good to go add two inches of vegetable oil to a frying pan and heat over medium heat.
Once hot, add the chicken fillets and fry for 4-5 minutes on each side until crispy and golden brown.
Then, transfer the chicken to a plate lined with paper towels and let it rest for 5 minutes to drain the oil.
Step 3: Make the dressing
While the chicken is cooking, I like to prepare the dressing.
So, to do that, just add the Greek yogurt, cilantro, garlic, olive oil, lime juice, and salt to a blender. Then, blend until smooth and bright green in color. Once it's blended and bright green in color transfer it to a bowl or jar.
Step 4: Assemble The Salad
Now you'll want to add three cups of lettuce to a big bowl or three individual bowls. Then, slice the fried chicken fillets and place them on the bed/s of lettuce.
Next, slice the hard-boiled eggs and place 'em on the lettuce along with the corn, cherry tomatoes, and bacon. Sprinkle with cheddar cheese and blue cheese. Finally, serve with the dressing on the side or drizzled on top and mix. Enjoy!
How To Store This Chick-fil-A Cobb Salad
If you have leftovers, the best way to store this Chick-fil-A cobb salad is in separate airtight containers in the fridge. The chicken and other toppings will keep in an airtight container for 3-4 days and the dressing is good for up to 1 week.
When you're ready to eat the salad again, just assemble and enjoy!
As I mentioned earlier, I love meal prepping this salad to eat for lunch or dinner throughout the week. It's a huge time-saver and tastes amazing leftover!
