You might be thinking, what is lavash? Lavash is a traditional thin flatbread that is popular in Middle Eastern and Mediterranean cuisines. I first came across lavash bread when I was looking for a healthier wrap to eat with my Qdoba chicken. I found Joseph's Lavash Bread in the grocery store and was instantly hooked. It tasted kind of like a cross between a tortilla wrap and pita bread, and I loved it so much that I had to try making my own version.
So that's where this lavash bread recipe was born. After several attempts (and fails) I finally nailed it. My lavash has a soft, pillowy texture and mild flavor that makes it ideal for just about any meal.
What I love most about this recipe is how forgiving and simple it is. Even if you’re new to bread making, my lavash flatbread is a great recipe to start with. It doesn’t require fancy ingredients or equipment, just a skillet and a bit of patience.

Here’s what you’ll need to make your own soft and chewy lavash bread:
- 300g flour
- 200g water, lukewarm
- 10g instant yeast
- 1 teaspoon sugar
- 1 teaspoon salt
How to Make Lavash Bread
Step 1: Prepare the Yeast Mixture
To start, add the water, yeast, and sugar to a large bowl and whisk to combine. Place the bowl in a warm spot in your kitchen for 10-15 minutes until the mixture foams up.
Step 2: Make the Dough
Add the flour and salt, and mix using a spatula or wooden spoon until a dough forms. Knead using your hands until the dough becomes smooth.
Cover the bowl with plastic wrap and place in a warm place for 15 minutes or until it looks like my dough in the picture below.
Step 3: Shape the Dough
Sprinkle flour on a clean surface, like your countertop, and place the dough on top. Divide the dough into 8 equal pieces that are shaped like mine.
Form each piece into a ball, place on the floured surface, and cover with a clean kitchen towel. Allow the dough pieces to rest for 15 more minutes.
Step 4: Roll and Cook
When the times up, place a skillet over high heat. Working with one piece of dough at a time, roll it out on a floured surface into an oval or round piece roughly 10 inches (25 centimeters). The size doesn't matter too much and will just determines how many pieces of flatbread you have.
Step 5: Finish Cooking and Serve
Transfer the flatbread to the hot skillet and cook for 1-2 minutes until bubbles start forming on the surface. Flip and cook for another 30-60 seconds until slightly golden.
Remove it from the skillet and transfer to a plate. Cover the lavash with a clean towel to keep it warm and repeat with the remaining dough pieces. Then use the lavash however you want and enjoy warm.
Expert Tips To Make Perfect Middle Eastern Flatbread
- Use warm water for the dough: Using lukewarm water helps activate the yeast faster, giving the dough a good rise.
- Let the dough rest: Don’t skip the resting periods! Letting the dough rest allows it to relax, making it easier to roll out and gives it a better texture once rolled out.
- Make it thin: Roll the dough as thin as possible to get that perfect lavash texture. If it's thin, it'll be light, airy, and just slightly chewy.
- Watch it while it cooks: Lavash cooks quickly, so keep an eye on the heat and don't walk away while cooking! Flip it as soon as bubbles form to avoid burning the bread.

Can I use whole wheat flour?
Absolutely! You can substitute some or all of the all-purpose flour with whole wheat flour for a heartier flavor and texture.
