Sushi bowls have become a favorite in our house lately. It started out when we made these shrimp poke bowls and now has morphed into these imitation crab sushi bowls, too.
For what it's worth, the kids prefer this recipe - minus the spicy mayo - over that one, but hey, my wife and I dig both of them.
Now, I know the title of this section is in part "My Take," but I really tried to keep this recipe as close to an unwrapped California roll as possible. The only difference is that this bowl has got a spicy kick to it from the sauce - but you can easily leave that off if you're trying to keep your bowl spice-free.

As I just mentioned, these imitation crab sushi bowls basically have all of the same ingredients you'd get in a California roll.
With that said, here's what you'll need to make 'em:
- 2 cups sushi rice, cooked
- 4 oz imitation crab, chopped
- 2 tablespoon mayonnaise
- 1 teaspoon sriracha
- ¼ cucumber, diced
- 1 nori sheet, cut into small squares
- ½ avocado, sliced
- 2 tablespoon soy sauce
- 2 tablespoon spring onion, chopped

These California sushi bowls are super straightforward to put together. As I mentioned, just a few steps are standing between you and these delicious bowls. The whole process comes down to making the spicy mayo, assembling the bowls, and then adding the final touches.
The only thing you may have to preplan is having some cooked sushi rice on hand to make sure the process goes as seamlessly as possible, but that's easy to do.
Step One: Prepare Spicy Mayo

With that said, I don't recommend storing them longer than that...I find that after a few days the rice starts to dry/harden.
