The Iconic Marry Me Chicken Pasta Recipe
This celebrated chicken dish got its name from the Delish video by Lindsay Funston in 2016. The food was so delicious that the producer trying it exclaimed, "I'd marry you for that chicken!" Trust me, this is one of the most delicious recipes I've tried.
This marry me chicken pasta is a delicious blend of juicy chicken and tender pasta in a creamy sauce with sun-dried tomatoes and flavorful fresh ingredients. It's the perfect recipe to add to your usual dinner rotation or cook a special dinner to impress your guests.
Ingredients
Another reason this is my go-to chicken pasta recipe is that it's made with pretty ingredients and a few that add incredible flavor. Check out what you'll need:
- 10.5 oz. linguini pasta
- 4 chicken thighs boneless, skinless
- 1.5 teaspoon paprika
- 1 teaspoon red pepper flakes
- 2 tablespoon olive oil
- 1 tablespoon butter
- 1 medium onion, thinly sliced
- 4 garlic cloves
- 1 tablespoon tomato paste
- ½ tablespoon balsamic vinegar
- ¼ cup chicken broth
- ½ cup sundried tomatoes
- 1 teaspoon dried basil
- ¾ cup heavy cream
- ⅓ cup fresh grated parmesan cheese
- ¼ cup Basil
How To Make Marry Me Chicken Pasta
Step 1: Cook the pasta
First, bring a large pot of water to a boil and season it generously with salt.
Then cook the pasta following the package directions until the noodles are al dente. Drain the pasta once it's cooked and set aside.
Step 2: Season the chicken
Now add the chicken thighs to a bowl and drizzle with a tablespoon of olive oil. Season the chicken with ½ teaspoon of paprika, salt, and pepper.
Then you can toss the chicken until it's well coated on all sides.
Step 3: Cook the chicken
Next, heat a tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the thighs and cook for about 3-4 minutes until the chicken is golden on both sides.
Then transfer the chicken to a plate and cover it with aluminum foil to keep the cooked chicken warm.
Step 4: Cook the onions
To the same skillet you just cooked the chicken, add the butter. Once it's melted, you can add the sliced onions and sauté for a few minutes until soft.
Then add the garlic and cook it for 30 seconds until it's fragrant.
Step 5: Make the sauce
Stir in the tomato paste with the onions and fry for 30 seconds, then add balsamic vinegar, chicken stock, sundried tomatoes, dried basil, heavy cream, and parmesan cheese. Stir to incorporate everything together and simmer for a few minutes to thicken the sauce.
Step 6: Add the pasta and chicken
Now add the cooked pasta to the skillet and toss until all the noodles are coated in the sauce.
To finish up, slice the chicken thighs and place them on top of the pasta. Garnish with fresh basil and serve warm!
Recipe Tips
- Make the recipe more like the original. Use skinless chicken breasts instead of chicken thighs and penne pasta instead of linguini.
- If you don't have fresh onion or garlic, replace it with onion powder, garlic powder, or Italian seasoning for a different flavor.
- Add a small amount of oil to the cooked pasta to avoid it sticking together after it cooks.
How To Store Marry Me Pasta with Chicken
Transfer any cooled leftovers to an airtight container and store them in the fridge for up to 4 days. If you want to keep the leftovers for longer, store the chicken and pasta in a freezer-safe container or bag and freeze for about 3 months.
How To Reheat This Chicken Pasta
When you're ready to reheat it, heat the leftovers on medium heat in a pan with a little extra chicken stock to make sure it doesn't dry out. About 5-8 minutes, stirring frequently, will heat everything thoroughly.
