Taco night doesn't only have to be on Taco Tuesday, and with this delicious chicken street taco recipe, you'll want to make them every night! These street tacos made with chicken are a simple yet delicious meal that's perfect for feeding your family.
Grilled chicken is seasoned with classic southwest flavors like cumin, garlic, and ancho. And don't get me started on the homemade guacamole - made with avocado, onion, and fresh cilantro blended to a smooth spreadable consistency, it's above and beyond anything you'd get at a Mexican restaurant.
I think the combination of everything in the tacos is perfect, but feel free to customize them however you want! For the best meal ever, serve them with this Mexican street corn pasta salad.
Ingredients
I made super flavorful chicken tacos, but if you don't have some of the seasonings on hand, you can just use taco seasoning instead. Check out what you'll need
For The Grilled Chicken:
- 2 large chicken breasts, sliced in half
- ¼ red onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoon olive oil
- 2 tablespoon lemon juice
- 1 teaspoon chile ancho powder
- 1 teaspoon ground cumin
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon ground coriander
- ¼ teaspoon chipotle powder
For The Guacamole:
- ½ avocado
- ⅛ red onion
- 1 small garlic clove
- ½ cup cilantro
- ½ serrano pepper
- 3-4 tablespoon water
- 1 teaspoon lime juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
For Completing The Tacos:
- 8 corn tortillas
- 3 lettuce leaves, thinly sliced.
- ½ tomato, finely chopped
- ⅛ of a red onion, thinly sliced
How To Make Chicken Street Tacos
Step 1: First, add the chicken breasts, chopped onion, minced garlic, and olive oil to a bowl. Season with chile ancho powder, cumin, oregano, garlic powder, salt, black pepper, ground coriander, chipotle powder, and lemon juice. Toss until all chicken pieces are well seasoned.
Step 2: Now preheat a nonstick pan over medium-high heat. Once the pan is hot, add the chicken breasts and cook them for 4-6 minutes per side or until the chicken is cooked through and charred on the outside. Transfer it to a plate and let it rest for 10 minutes. Then, chop the cooked chicken into 1-inch cubes and set it aside.
Step 3: For the guac, add the avocado, red onion, 1 garlic clove, cilantro, serrano pepper, lime juice, salt, and pepper to a blender. Start with three tablespoons of water and blend until smooth. Add another tablespoon of water if needed. Taste and adjust seasoning as you see fit. Then transfer the homemade guac to a bowl.
Step 4: To assemble, lay the corn tortillas on a clean surface. Add a dollop of guacamole to each and spread. Top with the grilled chicken, lettuce, tomatoes, and red onion slices. Serve immediately and enjoy!
Recipe Tips And Variations To Try
- Heat the corn tortilla shells on a pan over medium heat for a minute on each side if you want them to have a crispy texture.
- Substitute chicken breast with boneless skinless chicken thighs for a different flavor.
- Make each street taco different. Lay out an array of toppings and ingredients for each guest to create their own taco!
- Substitute corn tortillas for soft flour tortillas if you prefer. Or make these tacos in a hard shell.
How To Store These Chicken Tacos
Once assembled, the tacos are best eaten immediately. If you have leftovers, I recommend storing each ingredient separately in an airtight container. Everything will keep best in the fridge for about two days. When you're ready to eat the tacos again, just assemble them as described above.
