ROTISSERIE CHICKEN GREEK BOWLS

INGREDIENTS

– 3 ounces plain greek yogurt – ½ cup grated Persian cucumber – 1 tablespoon fresh dill – 1 clove garlic, minced – 1 tbsp  lemon juice – ¼ tsp kosher salt  – ¼ tsp pepper

INGREDIENTS, CONT.

– 2 cups shredded rotisserie chicken – 1 tbsp extra virgin olive oil – 1/2 tsp cumin – 1/2 tsp paprika – 1/2 tsp garlic powder – Salt and pepper to taste

INGREDIENTS, CONT.

– 1 cup cooked rice – 1/2 cup sliced kalamata olives – 1 cup cherry tomatoes – 1/4 cup sliced red onion – 2 cups sliced romaine lettuce

INSTRUCTIONS

1. Prepare the tzatziki sauce in a small bowl 2. Season and cook the chicken over medium heat 3. Divide the rice into four bowls. Serve with chicken, tzatziki, and toppings
