CREAMY ROTISSERIE CHICKEN MUSHROOM SOUP

INGREDIENTS

– 2 cups shredded rotisserie chicken – 2 tablespoons olive oil – 1 medium onion, diced – 3 garlic cloves, minced – 2 cups mushrooms, sliced – 4 cups chicken broth

INGREDIENTS, CONT.

– 1 cup heavy cream – 1 teaspoon dried thyme – 1/2 teaspoon paprika – Salt and pepper to taste – Fresh parsley for garnish

INSTRUCTIONS

1. Saute the mushrooms, garlic, and onions in oil for 5 minutes 2. Add broth, chicken, and seasonings and simmer for 5 minutes 3. Stir in heavy cream and simmer 4. Garnish and serve
