SPINACH AND CHICKEN ROULADE

INGREDIENTS

– 2 large chicken breasts – 2 tbsp olive oil – 1 cup frozen spinach, thawed – 3 garlic cloves, minced – ¼ cup sundried tomatoes, chopped – ½ cup mozzarella cheese, grated – Salt and pepper

INSTRUCTIONS

1. Saute the filling in a pan 2. Spread the filling on a pounded chicken breast 3. Roll the chicken with cling wrap and seal in a bag 4. Boil the chicken for 10 mins and sear each side
