SHRIMP POKE BOWLS

INGREDIENTS

For the Shrimp: – ½ lb shrimp – ½ tsp salt – ¼ tsp black pepper – 1 tbsp butter

For the Cucumbers: – ½ Persian cucumber, thinly sliced – 1 tbsp rice vinegar – 1 tsp honey – 1/8 tsp red chili flakes – Pinch of salt

INGREDIENTS, CONT.

For the Dressing: – 2 tbsp soy sauce – 1 tsp honey – 2 tsp mustard – 1 garlic clove, minced – 1 inch ginger, grated

For the Bowl: – 2 cups cooked rice – ½ avocado, sliced – ½ mango, cubed – 1 spring onion, chopped – 2 tsp sesame seeds

INSTRUCTIONS

1. Mix the cucumber ingredients in a small bowl 2. Whisk the dressing ingredients in a small bowl 3. Cook the shrimp and set aside 4. Assemble your bowls and top with shrimp and dressing
