ITALIAN PASTIINA SOUP

INGREDIENTS

– 6 cups chicken broth – 1 medium onion – 2 carrots – 2 celery ribs – 2 garlic cloves – 1 parmesan rind – Salt and pepper – 1 cup pastina, or any tiny pasta variety

1.Add the vegetables and broth to a pot and bring to a simmer 2. Blend the vegetables with 2 cups of broth 3. Return the vegetable puree to the soup and add pasta. Cook until soft
