HOMEMADE CAVA'S CHICKEN BOWL

INGREDIENTS

– 1 lb chicken thighs – 2 tbsp olive oil – 1 ½ tbsp harissa – 3 garlic cloves, minced – 1 tbsp lemon juice – 1 tbsp parsley, finely chopped

INGREDIENTS, CONT.

– 1 tsp paprika – 1 tsp coriander – 1 tsp cumin – 1 tsp salt – 1 tbsp honey – 1 tbsp unsalted butter

INGREDIENTS, CONT.

– 1/2 tablespoon harissa paste – 1/2 tablespoon honey – 1 tablespoons red wine vinegar – 1 tablespoons fresh lemon juice – 1/4 teaspoon oregano – 1/4 teaspoon ground cumin

INGREDIENTS, CONT.

– 3 tbsp olive oil – 1/4 teaspoon oregano – 1/4 teaspoon ground cumin – 3 tbsp olive oil – 2 cups cooked Basmati rice – ½ avocado, sliced – ½ cup pickled red onion

INGREDIENTS, CONT.

– ½ cup crumbled feta – 1 cup cherry tomatoes, halved – 1 persian cucumber, diced – 1 cup shredded lettuce or greens – Pita Chips

INSTRUCTIONS

1. Marinate the chicken  2. Make the vinaigrette 3. Cook the chicken on a skillet with butter  4. Assemble the bowls with rice, chicken, and toppings
