WHY YOU'LL LOVE THIS RECIPE
This recipe takes one of my go-to Panera orders and makes it even fresher at home. And steaming it at the end gives it that gooey finish Panera does so well.
In a small bowl, mix mayonnaise with chopped chipotle peppers in adobo until smooth.
STEP 1: MAKE THE CHIPOTLE MAYO
Slice focaccia loaves into 4 rectangles. Spread chipotle mayo on all of the inside slices of the bread.
STEP 2: PREP THE BREAD
On half the bread slices, layer Gouda, avocado slices, shredded chicken, cilantro, and Peppadew peppers. Top with remaining bread slices.
STEP 3: ASSEMBLE THE SANDWICHES
Heat a skillet over medium-high. Add sandwiches and cook 2–3 minutes per side, until golden brown.
STEP 4: TOAST IN THE SKILLET
Tilt the skillet, pour 2 Tbsp water into the empty side, and cover immediately. Steam 1 minute until water evaporates and cheese is melted.
STEP 5: STEAM FOR MELTY CHEESE
Remove the sandwich from pan and do the same with the other one. Serve hot, sliced in halves if desired.
STEP 6: SERVE WARM
