CHINESE DRUNKEN CHICKEN

For the chicken and broth: – 2 whole bone-in, skin-on chicken legs – 2 large slices fresh ginger – 2 whole green onions – 1 tablespoon kosher salt

For the brine: – 1½ cups prepared chicken broth from previous step – 1½ cups Shaoxing Huadiao rice wine – 1 teaspoon salt  – 1 teaspoon sugar  – 1 tablespoon goji berries

INSTRUCTIONS

1. Prepare the broth in a large stock pot  2. Shock the chicken in an ice bath 3. Use the broth to make the brine 4. Pour brine over chicken and refrigerate for 24 hours
