CHICKEN ROLLATINI

INGREDIENTS

– 2 large chicken breast, cut in half – ½ tsp garlic powder – ½ tsp onion powder – ¼ tsp black pepper – ½ tsp salt – 1 small onion, chopped – 1 celery stalk, chopped

INGREDIENTS CONTINUED

– 1/2 pound cooked ham – 2 tbsp olive oil – 1 cup day old bread – 4 ounces mozzarella – 1/2 cup Pecorino Romano cheese – 2 eggs – 1-2 cups Italian style breadcrumbs

SAUCE INGREDIENTS

– 1/2 cup white wine – 1 tbsp butter – ¾ cup chicken stock – 1 tbsp corn starch – 2 tbsp cream – 2 tbsp parsley, chopped

INSTRUCTIONS

1. Make the filling for the chicken 2. Season, stuff, and roll the chicken in breadcrumbs 3. Bake at  375F for 35mins 4. Make the sauce and pour over chicken. Broil for 5 mins
