ONE PAN CHICKEN AND YELLOW RICE

INGREDIENTS

For the Chicken: – 2 tsp turmeric – 1/4 tsp paprika – 1 tsp garlic powder – 1 tsp onion powder – ¼ tsp black pepper – 1 tsp salt – 1 lb chicken thighs, boneless skinless – 1 tbsp olive oil

For the Rice: – 1 tbsp butter, unsalted – 1 medium onion – 1 medium carrot – 2 garlic cloves – 2 cups basmati rice – 4 cups hot water or broth – ¾ cup peas – 2 tbsp parsley

INSTRUCTIONS

1. Season and sear the chicken thighs. Set aside. 2. Sautee the vegetables and rice 3. Add broth, peas, and chicken and simmer for 15-20 mins until rice is cooked
